No Excuse November Day 2: Wellness Wednesday

During Blogtober, we learned about the 8 deminsions of wellness: intellectual, emotional, physical, social, occupational, spiritual, environmental, and financial. We also saw how many of them overlap each other. For No Excuse November, we will share things we are doing or could do to get us towards our wellness goals.

Currently, my main deminsions of focus are intellectual, emotional, physical, and spiritual. What deminsions are you currently focused on or planning to focus on?

Something I am doing towards my intellectual wellness is my CEs for my pharmacy tech license. I do not currently work in that field; I worked hard for that license and would like to maintain it. Something I look forward to doing is the WordPress courses, to learn how to build this site and grow my audience.

No Excuse November Day 1: Tasty Tuesday

Happy November 1st and day 1 of No Excuse November!

We will continue with Tasty Tuesday during November.

The tweeks I made are as follows:

I used ground hot italain sausage, kale instead of spinach, added Mrs. Dash Italian seasoning and added crushed red pepper flakes. I served with cheese toast.

This soup is my husbands favorite at the restraunt, and he said my version was actually better. The leftovers were even better.

Blogtober Day 30: Step it up sunday

Simple steps we can take while preparing for the week to take it to the next level………

My weekend was pretty busy, so my time to prep for the week was limited. I knew I really had to utilize my time wisely. Sunday morning, I made waffles for breakfast. I decided to double the recipe, so I would have a couple extra for later in the week. Since I cook breakfast every morning, I knew this would save me some time during the week, therefore making my mornings smoother.

For waffles and pancakes, I like to use Millville Protein with Oats mix from Aldi’s. I like to add egg whites (1/3 cup per batch) to add more protein and make them a little fluffier. Sometimes, I add chopped peacans and chocolate chips (bake believe or lily’s brand).

Blogtober Day 19: Wellness Wednesday

During the month of October, we are focusing on two deminsions of wellness each wednesday. Last week, we focused on the physical and social deminsions. This week will be occupational and spiritual.

Occupational: personal satisfaction in your job/career.

Spiritual: the search for purpose and meaning in life, knowing which resources to use to cope with everyday life, values, and beliefs

For me occupationally I think having work life balance helps me to be a better employee and more satisfied with my job. I think prayer, self reflection, and spending time in nature really help my spiritual wellness.

Blogtober Day 11: Tasty Tuesday

So what did I eat that was tasty this week…………

This week, I finally decided to try pizza crusts made with canned chicken breast! This viral trend intrigued me, but I was hesitant. My husband was concerned it would hold up toppings, and so was I.

After looking over several recipes, I decided to give it a go. I used a 12.5 ounes can of premium chicken breast – drained, 1 large egg, about 3 tablespoons of egg white, and about 1/3 cup grated parmesan cheese.

1. In a mixing bowl, I whisked the egg with the egg whites, added the chicken breast, and then used the whisk to shredd it.

2. Next, I added the parmesan cheese and combined everything well.

3. I dumped the mixture on parchment paper, topped with another sheet of parchment, and rolled out into a ractangle (the size of a cookie sheet).

4. I removed the top parchment and moved the bottom parchment with crust to a cookie sheet.

5. I baked on 400 for 8 minutes and then switced to broil for about 2 minutes (just keep an eye on it).

6. I then topped it with sauce, turkey pepperoni, and mozeralla cheese.

7. Baked for 10 minutes at 400, then broil for 2 minutes (again, keep an eye on it).

My husband and I were both pleasantly surprised. The crust was a perfect texture and thickness. The flavor was spot on. This will defianlty be added to the meal rotation in our house. This was quick, easy, tasty, and all ingredients we usually have on hand.
