Welcome to Tasty Tueday! This week, it was hard to pick a favorite tasty dish because I had a few!
The winner was the Blue Apron dish One-Pot Tomato & Parmesan Risotto with Crispy Prosciutto. I had never cooked Risotto before, and my husband wasn’t sure he had ever eaten it, so this was a first for us both!

My weekend was pretty busy, so my time to prep for the week was limited. I knew I really had to utilize my time wisely. Sunday morning, I made waffles for breakfast. I decided to double the recipe, so I would have a couple extra for later in the week. Since I cook breakfast every morning, I knew this would save me some time during the week, therefore making my mornings smoother.
For waffles and pancakes, I like to use Millville Protein with Oats mix from Aldi’s. I like to add egg whites (1/3 cup per batch) to add more protein and make them a little fluffier. Sometimes, I add chopped peacans and chocolate chips (bake believe or lily’s brand).

Simple steps we can take while preparing for the week to take it to the next level……..
I am not a big meal planner or meal prepper. I do like to have an idea of a couple meals I might make through the week but no concret days.
Something I do like to do to step up my week is either buy pre-preped veggies or pre-prep fresh veggies for the week.
Example: I typycally buy frozen tri-pepper and onion mix, large packages of fresh spinach, and zuchinni that I will cut up* so it’ll be ready to use.
What are some smal steps you take to level up your week?

*I like to cut in thin slices and dice so I can use different ways.
