Blogtober Day 15: Spooky Saturday

In August, my husband and I were on our way home from a trip to Georgia (visiting family). We decided to make a bit of a date day on the drive home. We stopped through St. Augustine and visited the lighthouse since neither of us had done that before.

We were immediately delighted by the landscape and were soon intrigued by how much history this site holds. The property is beautiful, the keepers’ house was special, and the lighthouse was magnifcent. Every where you turn was another piece of history with great explanations and stories. As we were leaving, I was reviewing their brochure and noticed they had ghost tours. Soooooooooo, today’s spooky tale is from their website…….

In 1871, Hezekiah Pittee was brought in to oversee the construction of the new/replacement lighthouse. He moved down from Maine with his wife and three daughters. His daughters made friends with the other workers’ children very quickly and then turned the construction site into their personal playground. Onsite, there was a little railway and cart used for moving construction supplies. The railway ended at the water and had a board at the end to stop it. The three girls turned this railway and cart into their own personal rollercoaster.

On July 10, 1873, the three girls and a friend took a ride on the cart, but the stop board was not in place. They were dumpped into the water, and the cart landed over them, trapping them in the water. All but one of the girls died. After this tragic accident, there have been many strange occurences at the lighthouse. Girls giggling, apparitions, sitings of a young girl in Victorian Age clothing, EMF readings, shoelaces being tied to the staircase, and much more.

Blogtober Day 12: Wellness Wednesday

During the month of October, we are focusing on two deminsions of wellness each wednesday. Last week, we focused on the intellectual and emotional demensions, and this week’s two will be the physical and social.

Physical: all areas of the physical body. Nutrition, exercise, and disease prevention.

Social: social connections, relationships, and personal expression.

I can think of so many to obtain both of these deminsions of wellness. However, I have one that I really enjoy doing, and I think it covers both deminsions, walking with friends or family.

Blogtober Day 11: Tasty Tuesday

So what did I eat that was tasty this week…………

This week, I finally decided to try pizza crusts made with canned chicken breast! This viral trend intrigued me, but I was hesitant. My husband was concerned it would hold up toppings, and so was I.

After looking over several recipes, I decided to give it a go. I used a 12.5 ounes can of premium chicken breast – drained, 1 large egg, about 3 tablespoons of egg white, and about 1/3 cup grated parmesan cheese.

1. In a mixing bowl, I whisked the egg with the egg whites, added the chicken breast, and then used the whisk to shredd it.

2. Next, I added the parmesan cheese and combined everything well.

3. I dumped the mixture on parchment paper, topped with another sheet of parchment, and rolled out into a ractangle (the size of a cookie sheet).

4. I removed the top parchment and moved the bottom parchment with crust to a cookie sheet.

5. I baked on 400 for 8 minutes and then switced to broil for about 2 minutes (just keep an eye on it).

6. I then topped it with sauce, turkey pepperoni, and mozeralla cheese.

7. Baked for 10 minutes at 400, then broil for 2 minutes (again, keep an eye on it).

My husband and I were both pleasantly surprised. The crust was a perfect texture and thickness. The flavor was spot on. This will defianlty be added to the meal rotation in our house. This was quick, easy, tasty, and all ingredients we usually have on hand.

Blogtober Day 8: Spooky Saturday

For this weeks spooky Saturday I thought I would focus on somewhere I have been………… The Palace Saloon in Fernandina Beach, Fl.

The Palace Saloon is the oldest bar in Florida! It was built in 1878 and then became a bar in the early 1900s. While a few ghosts are rumored to roam here, the most well-known is Uncle Charlie. Charlie lived in the building for over 50 years and served as a bartender. It is said that he still plays piano sometimes.

Blogtober Day 5: Wellness Wednesday

What does Wellness mean to you?

Per Oxford Languages, Wellness is the state of being in good health, especially as an actively pursued goal.

Per Wikipedia, Wellness is a state beyond absence of illness but rather aims to optimize well-being (quality of life).

The original six dimensions of wellness included intellectual, emotional, physical, social, occupational, and spiritual wellness. Later environmental and financial wellness were added to make eight dimensions of wellness.

Each week we will dive a little deeper into 2 dimensions and discuss ways to achieve or maintain wellness in that dimension.

Week 1:

Intellectual: Brain health, learning, creativity, memory, knowledge, skills.

Emotional: Coping, identifying personal feelings and handling them. Controlling feelings and behaviors, overcoming obstacles. National Institutes of Health describe emotional wellness as “the ability to successfully handle life’s stresses and adapt to change and difficult times” (NIH, 2018)
